Bulgur With Bacon
|Bacon slices||4 , cut into 1-inch strips|
|Green onions||6 , trimmed and thinly sliced|
|Uncooked bulgur||1 Cup (16 tbs) (Cracked Wheat)|
|Chicken broth||2 Cup (32 tbs)|
1. Cook the bacon in a heavy 10-inch skillet over moderately high heat for 5 minutes, or until crisp. Using a slotted spoon, remove the bacon to paper toweling to drain. Pour off all but 2 tablespoons of the drippings.
2. Reduce the heat to moderate. Add the green onions to the skillet, and cook, uncovered, for 3 to 4 minutes, or until they just begin to soften.
3. Add the bulgur and chicken broth, stir once, cover, reduce the heat, and simmer for 15 to 20 minutes, or until the bulgur is tender and the broth has been absorbed. Grumble the reserved bacon over the top and serve.
