Spiced Peameal Back Bacon
|Back bacon||3 Pound (2 Loin Pieces Tied Together)|
|Fancy molasses/Honey / maple syrup||3 Tablespoon|
|Brown sugar||3 Tablespoon|
|Dry mustard||2 Teaspoon|
|Mixed ground spice||2 Teaspoon (Your Choice)|
|Dry bread crumbs||1⁄2 Cup (8 tbs)|
Cover back bacon with water and bring to a boil.
Turn heat low and cover.
Simmer 1 1/2 hours on heat or in a 350F oven.
Drain and place fat up in a small lightly oiled shallow bake dish.
Mix the next four ingredients together and stir in enough dry crumbs to thicken to a paste.
Spread over top and sides.
Pour 1/2 cup water into the pan to prevent sticking and bake at 325F for 1 to 1 1/4 hours.
