Bacon And Beef Succotash
|Beef chuck||3⁄4 Pound, ground|
|Onion||1 , chopped|
|Shelled lima beans||2 Cup (32 tbs) (Fresh / Frozen)|
|Water||1 Cup (16 tbs)|
|Canned whole kernel corn||2 Cup (32 tbs), drained|
Pan-broil bacon until crisp.
Remove bacon and reserve.
Heat 2 tablespoons of bacon fat.
Saute beef and onion in fat, breaking up meat with a fork.
Add Lima beans and water and simmer, covered, for about 15 minutes.
Add corn and simmer for another 5 minutes.
Season to taste.
