Preheat the oven to 400 F. Line a baking sheet with foil. Set aside.
Line 3 bowls. In the first bowl, add flour and mix the black pepper. Set aside. In the second bowl, break the eggs and lightly beat them. In the third bowl, mix bread crumbs, brown sugar and salt.
Take each bacon piece, dredge in flour mix, roll in egg and coat with bread crumb mix. Place it on the foil lined baking sheet. Repeat this with all the bacon.
Put the baking sheet in the oven and bake for 15 to 20 minutes depending upon the crispiness required.
Remove from the oven and let it sit for a few minutes and transfer them into a bowl. Serve with any dip or as it is.
