Bacon Ringed Eggs

Ingredients
  Bacon slice 1
  Egg 1
  Mashed potatoes 1⁄2 Cup (8 tbs)
  Fresh parsley To Taste (To Garnish)
  Salt To Taste
  Pepper To Taste
Directions

Lightly oil the bottom of a custard cup.
Curl the bacon slice around the inside of the cup. (If you prefer the bacon crisp, fry slightly before lining the cup.) Break the egg inside the bacon ring.
Season with salt and pepper to taste.
Bake at 350°F (175°C) for about 15 to 20 minutes or until egg is firm but not hard. (Cooking time will vary with the number of bacon and egg dishes you are baking.) Carefully remove egg and bacon together from the cup.
Place in the middle of the mashed potatoes.
Garnish with parsley.
