|Unsalted margarine/Butter||2 Tablespoon|
|Tomatoes||2 Medium, coarsely chopped|
|Sliced green onions||1⁄4 Cup (4 tbs)|
|Low salt bacon slice||8 , cooked crisp and crumbled (Armoura Brand)|
|Uncooked rice||1 Cup (16 tbs)|
|No salt added chicken flavor instant bouillon||1 Teaspoon|
Melt margarine in large skillet or saucepan over medium heat.
Add tomatoes and green onions; cook and stir for 2 minutes.
Stir in 2 cups water and remaining ingredients.
Heat to a boil; reduce heat to low and cover.
Simmer 20 to 25 minutes or until liquid is absorbed.
Fluff rice with fork.
Garnish with fresh parsley, if desired.
