Mussels In Bacon

1. Scrub the mussels well with a stiff brush or a plastic mesh scrubbing ball. Rinse well and put them into a heavy kettle. Add the water and steam ten minutes. Discard any mussels that do not open. Use a knife to remove the mussels from the shells.
2. Preheat oven to hot (400° F.).
3. Cut the bacon slices in half crosswise and cook in a skillet until half done. Drain on absorbent paper and cool slightly. Wrap a half slice of bacon around each mussel and secure each with a toothpick.
4. Bake in oven five minutes or until the bacon is crisp. Drain on absorbent paper and serve.
