Corn And Bacon Fritters
|Frozen sweet corn||10 Ounce (1 Small Size Carton / 1 Can)|
|Self raising flour||2 Ounce|
|Fat||2 Cup (32 tbs) (For Frying)|
Cook the corn according to the directions on the carton if using frozen variety.
The canned variety should just be strained.
Cut the rashers of bacon into small dice.
Fry gently for a few minutes.
Remove from the pan.
Make a batter with the flour and milk.
Stir in the corn and bacon.
Heat a little more fat in the frying pan and fry tablespoons of the mixture, turning once, until golden brown on both sides, about 5 minutes.
