Bacon Upside Down Cornbread
|Bacon slices||4 , cut in thirds|
|Corn muffin mix/Cornbread mix||8 1⁄2 Ounce (One Package)|
Arrange bacon pieces on bottom of an 8x8x2-inch baking pan.
Prepare mix according to directions on pack age.
Spoon batter into the pan over the bacon and carefully spread to corners.
Bake as directed on package for cornbread.
Remove from oven; cool 2 minutes on wire rack.
Loosen cornbread from pan and invert on a baking sheet.
Set under broiler about 4 inches from source of heat and broil about 1 minute, or until bacon is crisp.
