Avocado And Scallop Seviche
|Fresh lime juice||1⁄2 Cup (8 tbs) (About 4 Limes)|
|Peanut oil/Vegetable oil||3 Tablespoon|
|Green peppercorns||24 , crushed|
|Freshly ground black pepper||To Taste|
|Scallops||3⁄4 Pound, finely chopped (Sea Or Bay)|
|Ripe avocado||1 Large, peeled|
|Fresh chives/Fresh scallions||2 Tablespoon, chopped|
|White mushrooms||40 Small|
|Vegetable oil||1⁄4 Cup (4 tbs)|
|Fresh lemon juice||2 Tablespoon|
|Garlic clove||1 Medium, peeled and crushed|
Combine the lime juice, oil, crushed peppercorns, salt, and pepper together in a glass or ceramic bowl.
Stir in the scallops, cover, and refrigerate them for at least 4 hours while they marinate.
They should become opaque in this time.
Mash the avocado until almost smooth, then add it along with the chives or scallions to the marinating scallops (do not drain them) and mix it well.
Combine the vegetable oil, lemon juice, garlic, salt, and pepper in a small bowl, and brush the insides of the mushrooms liberally with this mixture.
