Kumquat Avocado Mould

Ingredients
  Boiling water 3⁄4 Cup (12 tbs)
  Lemon flavored gelatin 6 Ounce (1 Package)
  Salt 1⁄4 Teaspoon
  Ginger ale 1 1⁄4 Cup (20 tbs), chilled
  Fresh kumquats 1 Pint, rinsed and thinly sliced
  Ripe avocados 2 , peeled and diced
Directions

Pour boiling water over gelatin in a bowl and stir until gelatin is dissolved.
Mix in salt and ginger ale.
Chill until slightly thicker than thick, unbeaten egg white.
Mix in the kumquats and avocados.
Turn into a 1-quart mold.
Chill until firm.
Unmold onto a chilled serving plate.
Garnish as desired.
