|Canned consomme||21 Ounce, chilled|
|Lemon juice||1 Tablespoon|
|Sour half and half||3 Tablespoon|
|Red caviar||2 Ounce|
|Chopped chives/Chopped green onions||1 Tablespoon|
Turn chilled consomme into a bowl and mix with a fork to break up lightly.
Peel and dice avocado and sprinkle with lemon juice to prevent darkening.
Lightly mix avocado into the consomme and spoon into small soup bowls or tea cups.
Top with a spoonful of sour half and half and caviar.
Sprinkle with chives.
Serve at once.
