Avocado And Corn
|Frozen kernel corn||20 Ounce|
|Finely sliced celery||1 Cup (16 tbs)|
|Lemon juice||1⁄4 Cup (4 tbs)|
|Olive oil/Salad oil||2 Tablespoon|
|Hot pepper sauce||1⁄2 Teaspoon|
|Diced avocado||2 Cup (32 tbs)|
Cook 2 (10-oz.) pkgs. frozen kernel corn according to label directions, adding 1 cup finely sliced celery.
Drain and heat gently in 1/4 cup lemon juice, 2 tablespoons olive or salad oil, and 1/2 teaspoon hot pepper sauce.
Remove from heat.
Fold in 2 cups diced avocado and let stand, covered, 5-10 minutes or until avocado is heated through.
