Avocado and Shrimp
|Lime jelly||3 Ounce (1 package)|
|Boiling water||1 Cup (16 tbs)|
|Mayonnaise||1⁄2 Cup (8 tbs)|
|Whipped cream||1⁄2 Cup (8 tbs)|
|Mandarin oranges||1 Can (10 oz), drained (1 tin)|
|Avocado||1 Cup (16 tbs), mashed|
1 In a pan, dissolve jelly in boiling water.
2 Pour in ring molds and allow to set.
3 Fill the centre with fresh shrimps on lettuce leaf or endive.
You can also prepare cheese carrots to serve along the salad, Cheese Carrots: Cream velveeta cheese, add a very little mayonnaise and paprika, roll in your hands to form very small carrots and put in refrigerator.
When ready to serve put a sprig of parsley in end for carrot top.
