Spicy Avocado

Ingredients
  Ripe avocados 2
  Lemon juice 1 Tablespoon
  Tomato 1 Large, peeled, deseeded and chopped
  Spring onion 3 , finely chopped
  Green chili 1 , deseeded and chopped
  Chopped fresh coriander 2 Tablespoon
  Olive oil 3 Tablespoon
  Salt To Taste
  Black pepper To Taste
  Coriander sprig 1
Directions

GETTING READY
1) Slice the avocados in half and remove the stones. Peel the halves and chop the flesh.

MAKING
2) In a large clean bowl combine the chopped avocados with lemon juice and mash to make a pulp.
3) Now, add spring onions, coriander, oil, and tomato and stir well. Gently mix seasonings as per taste.

SERVING
4) Pour over freshly cooked pasta and garnish with coriander sprigs. Serve immediately with soured cream, if desired.
