Avocado Aspic Ring
|Unflavored gelatin||2 Tablespoon (2 envelopes)|
|Cold water||1⁄2 Cup (8 tbs)|
|Seasoned chicken broth/Consomme||3 Cup (48 tbs)|
|Avocados||2 , halved|
|Lemon juice||1 Tablespoon|
|Grated onion||2 Teaspoon|
|Diced celery/Cucumber, cooked chicken / shrimp||1 Cup (16 tbs)|
1. Soften the gelatin in cold water. Heat, stirring, until dissolved. Add the broth and cool to room temperature.
2. Remove the seeds from the avocados, peel and cut into thin rings. Cut these in half to form crescents. Sprinkle with lemon juice.
3. Cover the bottom of a ring mold with gelatin and chill until set. Arrange the crescents on top and cover with a layer of soft gelatin. Chill. Arrange more crescents around the sides and add a thin layer of gelatin to hold them in place.
4. Mix the remaining gelatin with the onion, celery and remaining avocado, chopped. Turn into the garnished mold and chill until firm. Unmold.
