Avocado With Prawns
|Lemon juice||2 Teaspoon (Lime Juice)|
|Peeled prawns||2 Ounce, chilled (60 Grams)|
|For basic sauce|
|Whipped cream/Soured cream/strained yoghurt||1 Tablespoon|
|Tomato ketchup||1 Tablespoon|
|Creamed horseradish||1 Teaspoon (According To Strength)|
|Lemon juice||To Taste|
|Grated lemon rind||2 Teaspoon (To Garnish)|
First mix all the ingredients of the sauce together and chill well.
Make sure that the prawns are well chilled but keep the avocado at room temperature for it will then be sweeter.
Cut the avocado in half, remove the stone and lightly paint all the exposed surfaces with lemon juice or lime juice.
Place the halves on individual plates on a small cushion of sliced lettuce.
Mix most of the prawns into the dressing and pile lightly into the avocados.
Top with the remaining prawns.
Lightly grate over some lemon or lime rind and serve at once.
