Salt Cod Salad With Avocado

Ingredients
  Salt cod 1 1⁄2 Pound
  Cucumber 1 , peeled and sliced
  Tomatoes 2 Medium, skinned and sliced
  Green chili pepper 1 , seeded and finely chopped
  Lime juice 2 Tablespoon
  Sunflower oil 3 Tablespoon
  Pepper To Taste
  Avocados 3
  Chopped fresh coriander/Chopped fresh parsley 2 Tablespoon
Directions

Place the fish in a large bowl, cover with cold water and leave to soak for 2 hours, changing the water twice.
Drain.
Place the fish in a pan with fresh cold water to cover and bring to a boil.
Simmer for 20 minutes, then drain.
Remove the skin and bones and flake the fish.
Leave to cool.
Mix together the fish, cucumber, tomatoes and chili.
Pour over the lime juice, oil and pepper.
Peel, halve and pit the avocados.
Slice them lengthwise.
Arrange a fan of avocado slices on each serving plate with a serving of fish salad beside it.
Sprinkle the salad with a little parsley and serve at once.
