Shrimp Filled Avacado
|Mayonnaise||1⁄2 Cup (8 tbs)|
|Curry powder||1⁄2 Teaspoon|
|Lemon juice||1 Teaspoon|
|Chopped cooked shrimps||1 1⁄2 Cup (24 tbs)|
|Hard cooked eggs||2 , chopped|
|Avocados||2 , peeled, halved and seeded|
|Soft bread crumbs||1⁄2 Cup (8 tbs)|
|Butter||1 Tablespoon, melted|
Mix mayonnaise, water, curry powder, and 2 tablespoons lemon juice.
Heat gently, add next 3 ingredients and heat through.
Brush avocados with lemon juice and fill with shrimp mixture.
Combine crumbs and butter and sprinkle over filled avocado halves.
Put under broiler until crumbs are lightly browned.
