Avocados With Gorgonzola And Balsamic Vinegar

Ingredients
  Ripe avocados 2
  Balsamic vinegar 2 Tablespoon
  Salt 1⁄2 Teaspoon
  Pepper 1⁄4 Teaspoon
  Extra virgin olive oil 3 Tablespoon
  Finely chopped red onion 2 Tablespoon
  Crumbled blue cheese 1⁄4 Cup (4 tbs) (Preferably Gorgonzola)
Directions

Cut each avocado in half and remove pit. In a small bowl, combine vinegar, salt, pepper, and olive oil.
Beat with a fork to blend.
Add red onion and blue cheese and stir just to mix.
Spoon dressing into each avocado hollow.
Eat with a spoon, right out of avocado shell.
