Tomato Avocado Relish

Ingredients
  Tomatoes 2 Medium, chopped
  Avocado 1 (ripe)
  Lemon juice 1⁄2 Teaspoon
  Salt To Taste
  Pepper To Taste
Directions

Place chopped tomatoes in a bowl.
Peel avocado and chop into small pieces.
Mix thoroughly with tomato.
Stir in lemon juice.
Place a plate or cover directly on top of tomato- avocado mixture.
Weight the plate down into the mixture to be sure avocado is completely submersed in the liquid to prevent discoloration.
Marinate for at least 6 hours.
Drain thoroughly and chill.
Before serving, sprinkle salt and pepper to taste.
