Avocado With Orange
|Olive oil||2 Tablespoon|
|Lemon juice||1 Tablespoon|
|Orange juice||1 Tablespoon|
|Minced parsley||1 Teaspoon|
|Grated orange rind||1⁄4 Teaspoon|
|Dry mustard||1 Dash|
|Avocado||1 Large, peeled|
|Navel oranges||2 , sectioned|
|Parsley sprigs||3 (For Garnishing)|
Combine the oil, lemon juice, orange juice, parsley, orange rind, and mustard in a small bowl.
Cut the avocado in half lengthwise, then into thin, lengthwise slices.
Peel the membranes off the orange sections, if desired.
Arrange the avocado slices and orange sections in a wheel shape on a round serving dish.
This can be done by alternating orange sections with avocado slices or by making an inner wheel of orange sections and placing the avocado slices around the outside.
Pour the dressing over the orange and avocado arrangement.
Garnish with the parsley sprigs and chill briefly before serving, if desired.
