Avocado Ring Mold
|Lemon flavored gelatin||3 Ounce (1 Package)|
|Hot water||1 Cup (16 tbs)|
|Lemon juice||3 Tablespoon|
|Mayonnaise||1⁄2 Cup (8 tbs)|
|Mashed avocado||1 Cup (16 tbs)|
|Heavy cream||2⁄3 Cup (10.67 tbs), whipped|
|Fruits/Vegetables||2 Cup (32 tbs) (For Garnish)|
|Mayonnaise/French dressing||1⁄2 Cup (8 tbs)|
Dissolve gelatin in hot water; chill until slightly thickened.
Combine remaining ingredients except garnish and dressing; fold into gelatin mixture.
Pour into a 1 1/2-quart ring mold and chill until firm.
Unmold on a large chilled plate and garnish with orange and grapefruit sections or vegetables such as cooked green beans, carrot strips, cherry tomatoes, or sliced beets which have been marinated in French dressing for an hour or more.
Dressing may be passed in a bowl.
