Simmered Scallops With Avacado
|White wine||2 Cup (32 tbs)|
|Whipping cream||1⁄2 Cup (8 tbs)|
|Cornstarch||1 Tablespoon, dissolved in 2 tablespoon of cold water|
|Cold water||2 Tablespoon|
1 In a pan, add chopped shallots, scallops and tarragon.
2 Pour in white wine and simmer for 10 minutes.
3 Strain well and reserve the broth.
4 In a serving dish, arrange the scallops and sliced avocados.
5 Sprinkle with lemon juice.
6 Return the strained broth to the pan and boil until it is reduced to half.
7 Add in the whipped cream and mix well.
8 Stir in the cornstarch, mixing well.
9 Add in salt and pepper.
10 Pour the prepared sauce over the scallops.
11 Garnish with remaining sliced avocados and serve.
