Shrimp in avocado ring is a savory and delicious seafood mold made with lemon gelatin. Prepared with avocados, the shrimp avocado ring can be served as a side or between the courses for big dinner parties.
Lemon gelatin packet
3 Ounce (1 Package)
1 Cup (16 tbs)
2 Medium, peeled and sieved
1 Cup (16 tbs), whipped
Cleaned and cooked shrimp
Dissolve gelatin in 1 cup boiling water.
Chill till partially set; whip till fluffy.
Stir in mayonnaise, lemon juice, and salt.
Fold in avocado and whipped cream.
Pour into 5 1/2 cup ring mold or six to eight 1/2 cup ring molds.
Chill till firm.
Unmold on lettuce; fill center with shrimp.
