Asparagus And Almond Mold
|Unflavored gelatin||1 Tablespoon|
|Cold water||1⁄4 Cup (4 tbs)|
|Canned asparagus||15 Ounce, cut in 1 inch lengths|
|Liquid||1 Cup (16 tbs) (From Asparagus)|
|Mayonnaise||1⁄2 Cup (8 tbs)|
|Heavy cream||1⁄2 Cup (8 tbs), whipped|
|Lemon juice||1 Tablespoon|
|Blanched almonds||3⁄4 Cup (12 tbs), slivered|
Soften gelatin in cold water.
Drain liquid from asparagus and add sufficient water to make 1 cup.
Heat liquid and add gelatin; stir until dissolved.
Chill until mixture begins to thicken.
Fold in mayonnaise, whipped cream, salt and lemon juice.
Fold in asparagus and almonds.
Pour into mold and chill.
Serve with mayonnaise flavored with lemon juice.
