Saucy Asparagus Chicken
|Canned asparagus||15 Ounce, drained|
|Boneless skinless chicken breasts||4|
|Vegetable oil||2 Tablespoon|
|Cream of chicken soup||1 Can (10 oz)|
|Mayonnaise||1⁄2 Cup (8 tbs)|
|Lemon juice||1 Teaspoon|
|Curry powder||1⁄2 Teaspoon|
|Shredded cheddar cheese||4 Ounce (About 1 Cup)|
Place the asparagus in a greased 9 inch-square baking dish.
Brown the chicken on both sides in the oil in a skillet over medium heat.
Season with the salt and pepper.
Arrange the chicken over the asparagus.
Combine the soup, mayonnaise, lemon juice and curry powder in a bowl and mix well.
Pour the soup mixture over the chicken.
Bake, covered, at 375 degrees for 40 minutes.
Layer the Cheddar cheese over the top.
Bake for 5 minutes longer.
Serve over rice.
