Grilled Salmon With Hollandaise And Asparagus Sauce

  Asparagus spears 12
  Norwegian salmon steaks 900 Gram (Sauce Hollandaise Made With 3 Egg Yolks)
  Seasoned flour 1⁄2 Cup (8 tbs)
  Salt 1 Teaspoon (Sauce Hollandaise Made With 3 Egg Yolks)
  Ground black pepper 1⁄2 Teaspoon
  Butter 150 Gram
  Oil 4 Tablespoon
Directions

GETTING READY 1) Arrange all the ingredients required. MAKING 2) In boiling salted water, blanch asparagus for 2 minutes and then refresh and drain thoroughly. 3) Afterwards, cut the asparagus into 1/4'' pieces. 4) Into the sauce, fold the asparagus and keep it aside. 5) On to a large plate, sift flour, pepper and salt together. 6) In a frying pan, heat butter with oil over moderate heat before serving. 7) Once the butter starts to froth, dip salmon in seasoned flour in order to coat it completely. 8) Fry salmon till cooked through and crisp on all sides. SERVING 9) On a serving platter or individual plates, place the salmon and spoon sauce over it, covering only the centre of the steaks, or serve it separately.
