Asparagus Tomato Duet

Ingredients
  Bacon slices 3
  Sliced green onion 1⁄4 Cup (4 tbs)
  Vinegar 3 Tablespoon
  Water 1 Tablespoon
  Sugar 2 Teaspoon
  Salt 1⁄4 Teaspoon
  Asparagus 1 1⁄2 Pound, bias-cut in 1 1/2-inch pieces
  Tomatoes 2 Medium, cut into wedges
Directions

MAKING
1. In a skillet, fry bacon in its own fat till crisp;
2. Using slotted spoon remove bacon on a kitchen paper and drain. When cool, crumble.
3. To the drippings in the skillet, add onion and sauté till soft.
4. Add crumbled bacon, vinegar, water, sugar, and salt.
5. Stir till the sugar dissolves and liquid starts to boil.
6. Add asparagus to the pan.
7. Cover skillet and simmer for 5 minutes.
8. Finally add tomato wedges and simmer covered for another 3 minutes, stirring often.

SERVING
9. Serve hot, on toast or as a side dish.
