Tuna With Asparagus And Almonds

Ingredients
  Butter 2 Teaspoon
  Flour 2 Teaspoon
  Milk/1/2 cup white wine and 1/2 cup water 1 Cup (16 tbs)
  Egg yolk 1
  Cream 1⁄2 Cup (8 tbs)
  Lemon juice 1 Teaspoon
  Salt 1⁄4 Teaspoon
  Pepper 1⁄4 Teaspoon
  Mace 1⁄4 Teaspoon
  Canned tuna/Salmon / crab 6 1⁄2 Ounce
  Shredded almonds 4 Teaspoon
  Asparagus spears 20
  Chopped almonds 1 Tablespoon
  Butter 2 Tablespoon
  Chopped parsley 2 Teaspoon
  Pepper 1
Directions

Melt butter; stir in flour.
Slowly add milk, stirring with a wire whisk.
Simmer 5 minutes.
Remove from heat.
Mix egg yolk with cream and lemon juice.
Stir into sauce and add seasonings.
Add drained fish, broken into pieces.
Add shredded almonds.
Arrange asparagus in a buttered oven-proof dish; cover with fish mixture.
Sprinkle with chopped almonds, dot with butter and bake in a 350° oven for 30 minutes.
Garnish with parsley and pepper.
