Asparagus With Citrus Fruit
|Mayonnaise||60 Milliliter (1/4 Cup)|
|Lettuce||250 Milliliter, finely shredded (1 Cup)|
|Asparagus spears||24 , cooked|
– Peel fruit, including white underskin. Separate into small segments. Keep juice.
– In a bowl, mix together mayonnaise and fruit juice and set aside.
– Spread shredded lettuce on 4 salad plates and top with 6 asparagus on each.
– With a pastry bag and fine nozzle attachment, pipe a ribbon of mayonnaise diagonally across asparagus spears. Garnish with citrus fruit segments.
