Chilled Asparagus Spears
|Fresh asparagus spears||2 Pound|
|Rich meat stock||3 Cup (48 tbs)|
|Carrot||1 , thinly sliced|
|Lemon||1 , thinly sliced, unpeeled|
|Diced onion||1 Tablespoon|
Trim asparagus spears to the same length.
In a wide shallow pan bring to a boil meat stock seasoned with carrot, lemon, parsley, onion, and salt.
Add asparagus, keeping spears parallel, and cook covered just until tender.
Chill in stock.
Drain spears, and place upright in a bowl or flat on a tray.
