Chilled Asparagus Spears

Ingredients
  Fresh asparagus spears 2 Pound
  Rich meat stock 3 Cup (48 tbs)
  Carrot 1 , thinly sliced
  Lemon 1 , thinly sliced, unpeeled
  Parsley sprigs 3
  Diced onion 1 Tablespoon
  Salt 1 Teaspoon
Directions

Trim asparagus spears to the same length.
In a wide shallow pan bring to a boil meat stock seasoned with carrot, lemon, parsley, onion, and salt.
Add asparagus, keeping spears parallel, and cook covered just until tender.
Chill in stock.
Drain spears, and place upright in a bowl or flat on a tray.
