Prawns With Asparagus

Ingredients
  Fresh asparagus 175 Gram, cut into 2.5 centimeter pieces
  Salt 1⁄2 Teaspoon
  Dry sherry 4 Tablespoon
  Light soy sauce 1 Teaspoon
  Peeled prawns 450 Gram
  Sunflower oil 2 Tablespoon
  Garlic 2 Clove (10 gm), thinly sliced
  Freshly chopped root ginger 2 Teaspoon
  Spring onions 4 , chopped
Directions

Blanch the asparagus in boiling salted water for 2 minutes.
Drain well and set aside.
Mix the wine or sherry with the soy sauce.
Stir in the prawns and leave to marrinate for 15 minutes.
Heat the oil in a wok or deep frying pan and quickly stir-fry the garlic, ginger and half the spring onions.
Add the prawns and mirinade, and the asparagus, and stir-fry for 1-2 minutes, until the ingredients are hot.
