Vegetable Biryani

Vegetable Biryani is a term commonly used to refer to all the vegetarian biryani varieties, wherein other than cooked rice, spices and condiments, a mix of a variety of vegetables too form the main ingredient. Vegetable biryani is often cooked less spicy and takes in popular veggies like sliced or cubed potatoes, carrots, cauliflower, soya bean and mushrooms; although the choice of vegetables is open to one's imagination and likeability. Vegetarians who eat egg also add hard-boiled eggs to the biryani rice. Vegetable biryani like its non-vegetarian counterparts is best eaten with raita, vegetable gravy, fried potatoes and papads.
