Ciorbă is a type of Turkish sour soup that is prepared by using lots of meat and vegetables. The dish is known as "ciorbă de burtă" in Romanian language, which literally means stomach soup. The dish is extremely popular in various regions of Romania, where people generally identify this soup from the zero percentage of acid used. Acid is not included in the dish as the soup contains various other sour ingredients such as lemons, fermented wheat bran known as borş, lovage and sauerkraut juice, which is also known as "zeamă de varză acră". This dish is also known as sour soup in various parts cuisines like Southeast Asian, East Asian, and Slavic.
Ingredients Used For Making Ciorbă de Burtă
Ciorba is prepared by using some basic ingredients that include lamb loin chops or beef stew meat, finely minced onions, peeled and seeded then crushed tomatoes, thinly sliced carrots, thinly sliced celery stalks, chopped medium sized potatoes, chopped turnips, finely chopped fresh parsley, tomato paste, black pepper, kosher salt, lemon juice, turmeric, ginger, saffron and overnight soaked dried chickpeas or garbanzos.

The soup is very simple to make and is essentially made by just boiling all the ingredients together also with the spices. The most interesting part of this dish is that it simulataneously uses both tomato pieces and tomato paste .Ingredients like spice, chickpeas and lemon juice are usually added to spice up the taste of the Ciorbă.
