Bun Bo Hue

Bun Bo hue is a popular Vietnamese soup like dish which has rice vermicelli and is flavored with lemon grass. The other name for the dish is Bun bo gio heo. A typical Bun Bo Hue The soup is made by boiling beef bones to make a broth. The broth is then flavored with lemon grass, often chilli and shrimp paste. Beef, pork and oxtail slices are dispersed in the broth along with rice noodles. At times, cubes of coagulated blood of pork are also added which gives the soup its dark brown color. The soup is served with shredded cabbage, moon beans, lemon wedges and cilantro.
