Filipino Eggplant Omelet

This eggplant recipe is different from other eggplant recipes. It can make a good snack or a light meal. Enjoy!!
Ingredients
  Oil 2 Tablespoon
  Ground pork 1⁄2 Kilogram
  Potato 1 , diced
  Carrot 1 , diced
  Raisins 14 Gram (1 Box)
  Pang gisa saute mix 10 Gram (Mama Sita's)
  All purpose flour 4 Tablespoon
  Eggplants 5 Medium
  Eggs 3 Medium, beaten
Directions

Grill eggplants. Peel the brunt skin.
Heat oil. Saute pork.
Add potatoes, carrots and raisins.
Cook until tender. Add Mama Sita's pang gisa saute mix.
Transfer and set aside.
Divide egg into two. Pour half mixture into mixture and mix well.
Dip the eggplant in the remaining beaten eggs.
Place meat mixture over it. Pan fry until golden brown on both sides.
Serve with sweet and sour sauce.
