Satay Sauce With Peanuts

  Peanuts 4 Ounce (100 Grams)
  Onion 1
  Garlic 2 Clove (10 gm)
  Lime juice/Lemon juice 1 Tablespoon
  Soy sauce 1 Tablespoon
  Peanut butter 2 Tablespoon
  Chilli powder 1 Pinch
  Salt To Taste
  Freshly ground black pepper To Taste
  Creamed coconut 2 Ounce (50 Grams)
  Water 1⁄4 Pint (150 Milliliter)

Preheat the oven to 190°C/375°F, Gas Mark 5.
Put the peanuts on a flat baking sheet and roast for 5 minutes.
Peel and finely chop the onion and garlic.
Add the lime or lemon juice, soy sauce, peanut butter, chilli powder and seasoning.
Add the roasted peanuts and pound until smooth or liquidize until the mixture forms a puree.
Meanwhile, heat the creamed coconut with water.
Add to the other ingredients.
Spoon into a bowl to serve with the Satay Lembu.
The flavour of this sauce can be changed by using either a smooth or crunchy peanut butter with the peanuts.
