Persian Rice Salad

If you want a yummy salad to serve for your party then Persian Rice Salad is the one for you! I often make it as a surprise treat for my guests! Try making this addictive Persian Rice Salad!
Ingredients
  Long grain rice 4 Cup (64 tbs)
  Fresh ginger slice 2 , finely chopped
  Ground coriander 2 Teaspoon
  Ground cumin 2 Teaspoon
  Nutmeg 1⁄2 Teaspoon
  Green shallots 6 , finely chopped (Including Some Of Green Tops)
  Raisins 1⁄2 Cup (8 tbs)
  Sultanas 1⁄2 Cup (8 tbs)
  Dried apricots 1⁄2 Cup (8 tbs)
  Grated orange rind 1 Tablespoon
  Toasted pine nuts 1⁄2 Cup (8 tbs)
  Olive oil 1 Cup (16 tbs)
  Ground black pepper To Taste
  Salt To Taste
  Dried apricots 12 , poached in water 3-4 minutes (For Garnish)
  Pine nuts 2 Tablespoon (For Garnish)
Directions

Cook rice, 2 cups at a time, in plenty of boiling salted water for 15 minutes. Drain well. Cut apricots in thin slices. Place warm rice in a large bowl and add remaining ingredients, seasoning with salt and pepper. You need just enough oil to moisten rice without making it mushy, so add it gradually. Serve salad warm or at room temperature, garnished with apricots and nuts
