Fragrant Turkish Delight
|Sugar||2 Cup (32 tbs)|
|Water||3 Cup (48 tbs)|
|Cream of tartar||1⁄4 Teaspoon|
|Cornflour||2⁄3 Cup (10.67 tbs)|
|Icing sugar||1 1⁄2 Cup (24 tbs)|
|Rose water||1⁄4 Teaspoon|
|Icing sugar||3⁄4 Cup (12 tbs)|
Lightly oil a lamington tin.
Mix sugar, water and gelatine in a Pyrex jug.
Cook for 7 minutes on HIGH.
Cook a further 6-7 minutes on HIGH.
Mix together cream of tartar, cornflour and icing sugar.
Stir in sugar syrup.
Cook for 5-6 minutes on HIGH.
Mix in rose water and colouring until mixture is pale pink.
Pour into prepared tin.
Refrigerate until set.
Cut into 3cm squares with a wet knife.
Toss squares in icing sugar.
NOTE: Rose water is available from delicatessens or health-food shops.
