Eggs Foo Yong
|Crab meat||1 Cup (16 tbs)|
|Pea sprouts||1 Cup (16 tbs)|
Pick over the crab meat and discard foreign matter.
Wash and drain the pea sprouts.
Heat a pan with the oil and add the crab meat, pea sprouts, salt and pepper and saute for 10 minutes.
Beat the eggs, add water, stir well and pour into the same pan.
Brown on one side, slide the egg mixture out onto a plate, turn the other side onto the pan and brown.
Serve very hot on a flat dish.
