Low Calorie Chicken Oriental
|Broiler fryer||2 , cut up|
|Unsweetened pineapple chunks||1 Can (10 oz) (In Pineapple Juice)|
|Wine vinegar||3 Tablespoon|
|Soy sauce||1 Tablespoon|
|Dry mustard||1⁄2 Teaspoon|
|Green peppers||2 , seeded and cut into strips|
Place chicken pieces skin side up in a shallow baking dish and surround with pineapple chunks.
Mix juice with vinegar, soy sauce, mustard, salt and pepper and pour over chicken.
Bake, uncovered, in moderate oven (325Â°) for 40 minutes, basting occasionally.
Add pepper strips.
Combine cornstarch and water in a cup.
Stir into liquid in baking dish and bake an additional 15 minutes, or until bubbly.
