Oriental Rice With Asparagus
|Uncooked long grain white rice||1 1⁄2 Cup (24 tbs)|
|Water||3 Cup (48 tbs)|
|Light soy sauce||2 Tablespoon|
|Chopped fresh parsley||1⁄4 Cup (4 tbs)|
|Rice vinegar||2 Tablespoon|
|Asparagus||1⁄2 Pound, trimmed, cut into 1 inch pieces and steamed|
|Sliced canned low sodium plum tomatoes||3⁄4 Cup (12 tbs)|
|Chopped red onion||3⁄4 Cup (12 tbs)|
|Green bell pepper||1 , seeded and chopped|
Place rice and water in a saucepan and bring to a boil.
Reduce heat, cover, and simmer for 20 minutes or until rice is tender.
Transfer to a colander and rinse.
Combine soy sauce, parsley, rice vinegar, and sugar.
Toss sauce with rice, steamed asparagus, tomatoes, red onions, and green pepper.
