Oriental Rice With Asparagus

Ingredients
  Uncooked long grain white rice 1 1⁄2 Cup (24 tbs)
  Water 3 Cup (48 tbs)
  Light soy sauce 2 Tablespoon
  Chopped fresh parsley 1⁄4 Cup (4 tbs)
  Rice vinegar 2 Tablespoon
  Sugar 1 Teaspoon
  Asparagus 1⁄2 Pound, trimmed, cut into 1 inch pieces and steamed
  Sliced canned low sodium plum tomatoes 3⁄4 Cup (12 tbs)
  Chopped red onion 3⁄4 Cup (12 tbs)
  Green bell pepper 1 , seeded and chopped
Directions

Place rice and water in a saucepan and bring to a boil.
Reduce heat, cover, and simmer for 20 minutes or until rice is tender.
Transfer to a colander and rinse.
Combine soy sauce, parsley, rice vinegar, and sugar.
Toss sauce with rice, steamed asparagus, tomatoes, red onions, and green pepper.
