Peel and halve papaya and scoop out seeds; dice fruit.
Put in a blender container with orange juice, lime juice, and honey.
Puree until smooth.
Pour into a freezer container and freeze until just solid.
Remove from the freezer and turn into a mixing bowl.
Beat with an electric mixer, starting at low and gradually increasing to high speed, until smooth and slushy.
Beat egg whites until soft peaks form, and fold into the apaya mixture.
Turn into a freezer container, cover, and freeze until firm.
Serve in dessert bowls or wine glasses and garnish with a lime wedge.
Makes about 1 quart.
