|Cracked wheat||1 Cup (16 tbs)|
|Hot water||2 3⁄4 Cup (44 tbs)|
|Olive oil||1⁄2 Cup (8 tbs)|
|Lemon juice||3⁄4 Cup (12 tbs)|
|Green onions||5 , chopped|
|Garlic||2 Clove (10 gm), minced|
|Parsley||12 1⁄2 Gram, chopped|
|Mint leaves||1⁄2 Cup (8 tbs), chopped|
|Tomatoes||2 Large, chopped|
Combine wheat and hot water, and let soak for 2 to 3 hours.
Drain any remaining water.
Mix wheat with olive oil and lemonjuice.
In a large glass bowl, layer half the ingredients as listed, beginning with the wheat.
Salt and pepper to taste.
Repeat with remaining ingredients.
Chill 24 hours.
Toss salad before serving.
