Ingredients
  Cracked wheat 1 Cup (16 tbs)
  Hot water 2 3⁄4 Cup (44 tbs)
  Olive oil 1⁄2 Cup (8 tbs)
  Lemon juice 3⁄4 Cup (12 tbs)
  Green onions 5 , chopped
  Garlic 2 Clove (10 gm), minced
  Parsley 12 1⁄2 Gram, chopped
  Mint leaves 1⁄2 Cup (8 tbs), chopped
  Tomatoes 2 Large, chopped
  Salt To Taste
  Pepper To Taste
Directions

Combine wheat and hot water, and let soak for 2 to 3 hours.
Drain any remaining water.
Mix wheat with olive oil and lemonjuice.
In a large glass bowl, layer half the ingredients as listed, beginning with the wheat.
Salt and pepper to taste.
Repeat with remaining ingredients.
Chill 24 hours.
Toss salad before serving.
