|Fine bulgur||1⁄2 Cup (8 tbs)|
|Ripe tomatoes||6 , minced|

|Parsley||4 Bunch (400 gm), minced|

|Cucumbers||3 , diced|
|Light olive oil||1 Cup (16 tbs)|
|Lemon juice||1 Cup (16 tbs)|
|Black pepper||1 Pinch|
|Romaine lettuce||4 Medium (For Garnish)|
|Hot red pepper||To Taste|
In a mixing bowl combine the bulgur and the tomatoes with their juice.
Let is stay at room temperature for about thirty to sixty minutes until the bulgur is soft and the tomato liquid absorbed.
Add all the other vegetables and mix gently but thoroughly.
Combine the dressing ingredients in a separate bowl and pour over the bulgur mixture.
Serve in a wooden salad bowl, well chilled, and surrounded with Romaine lettuce leaves for garnish.
