1 Trim the meat of excess fat. Pound the boneless meat pieces with a meat mallet or 'hamam dista' till reduced to a pulp. Add all the ingredients together and blend to a paste in the mixie.
2 Everything should be well mixed and very soft. Take a handful of the meat mixture and shape onto skewers like sheekh kababs.
3 Now, take ordinary thread and wrap around the kabab thoroughly.
4 Put in a tandoor, or barbecue or grill in an oven rotating and basting with ghee.
5 Serve with lime wedges. The guests will unwind the strings themselves.
