Yin Yang Fried Rice

Yin yang fried rice is a popular Chinese dish that consists of 2 toppings served over fried rice. One side consists of chicken, onions, and ketchup sauce (the red side) and the other consists of shrimp, peas, and egg whites (the white side). Both are then poured on top of fried rice, formed into a shape of the yin-yang symbol. Here is a simple recipe on how to make it.

Ingredients

For fried rice base
Rice 2 Cup (32 tbs) , cooked, cooled overnight
Eggs 2 Medium , beaten
Vegetable oil 1 Tablespoon
For red side
Chicken breast boneless skinless 1 Medium , cut into strips 2 inches long
Salt To Taste
White pepper powder To Taste
Sugar 1 Teaspoon
Rice wine 1 Tablespoon
Onion 1/2 Medium , sliced
Ketchup 1/2 Cup (8 tbs) (tomato)
For white side
Shrimp 8 Medium , peeled, deveined
Peas 1/2 Cup (8 tbs)
Egg whites 3 Medium
Corn starch 1 Tablespoon (mixed with 1 tablespoon water)
Water 1 Tablespoon

Directions

GETTING READY

1. Clean and cut the chicken breast into small strips.

2. In a bowl, marinate the chicken strips in salt, white pepper powder and rice wine for 30 minutes.

3. In a small bowl, dissolve cornstarch in water.

4. In another bowl, marinate the shrimp in salt, white pepper powder and cornstarch.

5. FRIED RICE BASE: In a pan, heat 1 tablespoon oil. Put the cooked and cooled rice into it.

6. Stir till the rice begins to crackle. Add the eggs and mix till they are cooked fully.

7. Transfer them into a flat serving dish and spread evenly. Set aside.

MAKING

8. RED SIDE: In a skillet, heat 1 tablespoon oil. Put the sliced onion and sauté till translucent.

9. Put the marinated chicken and cook till done.

10. Add the ketchup and mix well till all are coated.

11. Remove from heat. Set aside.

12. WHITE SIDE: Clean the skillet and heat 1 tablespoon of oil. Add the shrimp and stir well.

13. When half cooked, put the peas, egg white and the cornstarch mixture. Cook till it thickens and eggs are fully cooked.

14. Remove from heat and set aside.

SERVING

15. In the serving dish, spread the rice base. On top of it spread the red chicken mixture on one side and white shrimp mixture on the other side and shape it like the yin-yang symbol. Serve hot.
