1. In a large bowl break eggs and add in onion, parsley and the spices. Whisk well all the ingredients.
2. Heat the oil in a saucepan. Pour in the egg mixture and cook, flip the omelet and cook on the other side.
3. Serve Palestinian Omelet with toast and fruit juice.
