Lumpiang Sariwa - Vegetable Roll

  Coconut oil 3 Tablespoon (for the stir fry)
  Meyer lemon 1 Large (for the stir fry)
  Garlic 14 Clove (70 gm), minced (for the stir fry (4 cloves are needed for the sauce))
  Tamari/Soy sauce 3 Tablespoon (for the stir fry)
  Green onion 2 Large, julienned (for the stir fry)
  Cabbage 1 Large, shredded (for the stir fry)
  Carrot 2 Medium, julienned (for the stir fry)
  Jicama 1 Large, julienned (for the stir fry)
  Shitake mushroom 10 Large, sliced (for the stir fry)
  Lettuce head 1 Medium (for the stir fry)
  Sea salt 1 Teaspoon (for the stir fry)
  Black pepper 1 Teaspoon (for the stir fry)
  Flour 1 Cup (16 tbs) (for the wrapper)
  Rice flour 1 Cup (16 tbs) (for the wrapper)
  Egg 2 Large, beaten (for the wrapper)
  Coconut milk 1 Cup (16 tbs) (for the wrapper)
  Cold water 1 Cup (16 tbs) (for the wrapper)
  Vegetable oil 1 Tablespoon (for the sauce)
  Muscovado sugae 2 Tablespoon (for the sauce)
  Peanut butter 1 Cup (16 tbs) (for the sauce)
  Lime 1 Medium, juiced (for the sauce)


1.Mix the tamari, lemon juice, salt and pepper.
2.In a wok, heat the coconut oil.
3.Add the vegetables and sauté just until tender.
4.Pour in the tamari mixture and season to taste.Set aside to cool.

5.Sift flour and salt.
6.Whisk eggs, water and coconut milk and then add to flour.
7.Pour water, mix and bring to the consistency of heavy cream.
8.Spoon onto a non stick skillet and cook until edges curl.

9.Mix lime juice with ½ cup of water.
10.In a pan, mix in vegetable oil, minced garlic cloves, tamari, muscovado sugar, peanut butter lime juice mixed with water and coconut milk.
11.Simmer all on low and cook down into a sauce.

12.To serve, place a lettuce leaf on the wrapper, fill with the stir fried vegetables, fold bottom, roll and top with sauce. Sprinkle chopped cilantro and crushed peanuts and serve.
